Am sorry Bruce just now seeing your comment, palm wine when freshly tapped tastes like robust white wine. Palm wine tappers would usually add saccharine as a sweetener always best straight from the tree. The alcohol content increases the longer it is left to ferment, this known as Oguro in Yoruba.
